Post-fermented for even more bite

Tea is dark black with tinges of red: great color! Pu-erh is also known as fermented tea, post-fermented tea, or dark tea. The first infusion tingles my mouth like alcohol: my wife disagrees. My wife likes the second and third infusions better: less strong. I like the tingle of the first infusion. I don't feel it is bitter. In Taiwan, pu-erh and chrysanthemum are brewed together for a better-tasting and fragrant tea served in dim sum restaurants. Just tried it here at home: nice combination! Since restaurant tea is complimentary, pu-erh prices can be low but are typically high. We just inspected the dry leaves: only found a few stems. Wikipedia says wet leaves falling apart means poor quality. This looks firm after several infusions. According to Wikipedia's judging quality for spent tea, "Whole leaves and leaf bud systems should be easily seen and picked out of the wet spent tea, with a limited amount of broken fragments." Not sure if those are whole leaves, but a great tea!
